Smoked Chicken Thighs

Smoked Chicken Thighs! If you have a smoker, this is a go to meal! Easy to prepare and easy to manage on the smoker, chicken thighs are cheap and nearly impossible to mess up when cooking at a low temperature. This is a great meal all year long and guaranteed to be a meal everybody will enjoy. Best served with your favorite barbecue sauce or check out ours on the Salsas & Sauces page.  2-3lbs Chicken Thighs (bone in & skin on)
Dry Rub
 ¼ cup Chipotle Powder or Cajun Seasoning
 ¼ cup Garlic Powder
 ¼ cup Onion Powder
 2 tbsp Ground Black Pepper
 1 tbsp Seasoning Salt

Pre-heat smoker to 230 degrees. We have a Green Mountain smoker and use applewood or mesquite wood chips.

Pull chicken thighs out of the fridge, mix rub mixture and place generously over the chicken.

Place directly on a preheated smoker.

Smoke the chicken thighs for 2-2.5hrs, flipping every 30-45 minutes until the internal temperature reaches at least 165 degrees. Enjoy!
