Smoked Chicken Thighs! If you have a smoker, this is a go to meal! Easy to prepare and easy to manage on the smoker, chicken thighs are cheap and nearly impossible to mess up when cooking at a low temperature. Pre-heat smoker to 230 degrees. We have a Green Mountain smoker and use applewood or mesquite wood chips.
Pull chicken thighs out of the fridge, mix rub mixture and place generously over the chicken.
Place directly on a preheated smoker.
Smoke the chicken thighs for 2-2.5hrs, flipping every 30-45 minutes until the internal temperature reaches at least 165 degrees. Enjoy!
