This salsa recipe is a labor of love but worth every effort for heating up the smoker. Smoking tomatoes allows the richness to build layers of flavors. Finally, pulsing in the food processor with fresh ingredients is the cherry on top. Enjoy with your favorite chips as an appetizer and then top your favorite tacos for dinner. Enjoy friends!

Ingredients:
 3 medium beefsteak tomatoes
 ½ cup fresh cilantro
 ¼ medium red onion- sliced
 1 jalapeno- seeds removed
 1 tbsp fresh minced garlic
 ½ lime juice
 1 tsp salt

Turn on smoker, add applewood chips and set temperature to 250 degrees. While the smoker preheats, slice tomatoes in thirds. Once the smoker is ready, smoke slice tomatoes for 1.5hrs. Remove from the smoker.

Add smoked sliced tomatoes to the food processor. Add all remaining ingredients. Pulse until well combined. Taste and add additional salt or seasonings if desired. Enjoy!
