Pitcher of Mojitos! I am very excited it's Friday and almost time for happy hour in Door County, WI. Our garden box is exploding with mint plants. Mint is very resilient and comes back every year with no prevail...so that means mojitos on repeat! Yes, mint needs to be muddled and yes it takes extra time but fresh muddled mint for mojitos is so worth it. Make a pitcher and share with your family or friends. The perfect refreshing handcrafted cocktail. Enjoy friends!

 30 Fresh mint leaves
 1 Lime
 3 cups Water
 1 cup White Sugar
 1 cup White Rum- Bacardi or similar
 Ice for serving
 Fresh mint leaves for serving

Place 1/3 of the mint leaves- about 10 leaves and 1/2 lime in a stone dish or a strong glass. Using a muddler, muddle the mint leaves and lime together. Continue to add the remaining mint leaves and the other 1/2 lime until all mint is muddled and all juice from the lime has released. Pour the rum to infuse with the mint and limes while you make the simple syrup.

To make the simple syrup: add the water and white sugar in a medium sauce pan. Heat to medium heat for a few minutes until all sugar has dissolved. Do not boil! Allow to cool for a few minutes.

In a large pitcher, strain the mint, lime and rum mixture. Add the simple syrup mixture. Add ice and serve with fresh mint leaves! Enjoy!
