Cook bacon as directed on package. Slice cheese and jalapenos to desired thickness.
Pre-heat oven to 375 degrees. To assemble: place pounded raw chicken breast on a large cutting board. Lay half strips of bacon, sliced cheese and jalapeno. Roll the stuffed chicken breast and place a toothpick inside to hold together. Mix the 2 eggs in a separate bowl until fully combined. Add the Panko breadcrumbs to a separate bowl. Then, dip the prepared stuffed chicken breasts in the egg wash until fully coated and then the breadcrumbs until fully coated. Place on a prepared baking dish. Bake for 25 minutes or until the chicken has reached an internal temperature of 165 degrees. Enjoy!
